This is just about the easiest cookie recipe you could possibly make and you feel almost righteous eating it because it’s pretty healthy. This was my inspiration.
 
1 cup nut or seed butter of your choice (I love Once Again sunflower butter)
1/3 c local raw honey
1 egg
1/2 T vanilla extract
1/2 t coarse sea salt
1/2 t baking soda
1/2 t baking powder
2/3 c whole rolled oats
1/4 c dark chocolate chips
1/4 c cacao nibs (or just use 1/2 c of either)
 
Preheat oven to 350. Mix all ingredients in a bowl. No need for a stand mixer. Use a cookie scoop to put on parchment or Silpat lined cookie sheet and slightly flatten. These will not expand much. Bake until lightly browned, about 9-12 minutes. Enjoy and just because they’re healthy, try not to eat them all in one sitting.
